I was pleasantly surprised by this book! After living in Japan for two years, I have been craving some of the traditional menu items that are difficult to find in the states. Most cookbooks I've found are very Americanized, however, and don't offer very authentic choices.This book is a nice blend between traditional Japanese and Western adaptations. It contains instructions for how to make sushi rolls common in American restaurants, but also includes dishes such as "oden" that are popular in Japan but rare in the U.S. If you can find the ingredients, the recipes are definitely worth it!My only complaint is the lack of pictures. I like to have a better idea of what I'm cooking, especially when it is an unfamiliar dish.
Many recipes, great explanations and good glossary. However - no pictures! Or more accurately, one picture every 30 or so pages on average. This is a huge problem for me as I find it very useful to have pictures of what the dish is supposed to look like.
This is a good book. A useful introduction to Japanese cuisine and culture behind the cuisine. I was I was disappointed in the quality of the pictures. I have some Japanese cook books that have beautiful pictures that not only capture the cuisine but the history and culture. Beautiful photos along with a beautifully written book not only teach but take you to that part of the world through writing, recipes and pictures! Although for me it fell short there. The Information in the book is of great learning! Also the seller I am very happy with! I had a big order when I ordered this book and I accidentally ordered 3 instead of one. I filled out the return page and had a response of approval for return of 2 of the books within minutes!

It also talks about how Japanese cooking encompasses the five senses and the five tastes. Filled with tips on how to adapt Japanese cooking for a western kitchen, the book contains recipes for everything from rice to sushi and beyond, such as how to put together a bento box. The subtitle describes how to make ramen, bento, sushi and more. But Japanese cooking goes beyond simple tastebud action. The book describes the need for simplicity and beauty in the presentation of meals as well, such as the plates you could use. The book is a comprehensive, interesting read about the basics of Japanese cooking. Very enjoyable.

There are a few things to remember in making it: be sure to cut your vegetable of choice (sweet potato, squash, etc.) evenly the same size; dry and lightly flour cut pieces before placing in in cold, lumpy batter; fry at a consistent temperature; finally, clean cooking oil of left over batter.Japanese dishes use much of the same vegetables, fruits, proteins, and condiments like western meals. Many of their dishes are cooked over a stove, grill or broiler and can be quickly prepared. Yes, you can even have cold Somen noodles with dipping sauce contrary to traditional western Ramen noodles with a pack of seasoning.It has many ways to cook rice, sushi, and the Japanese version of sweets (fruits, nuts, and Green Tea Ice Cream). Highly Reccomended for the Japanese food lover.
I love Asian cuisine, especially Japanese, and this cookbook arrived yesterday--worth the wait! It starts with a discussion on Japanese food, including aesthetics, and then goes through the basics: kitchenware, ingredients, and techniques, with recipes/chapters organized by major food categories (flavorings, rice, soup, noodles, salads, etc.) There's even a chapter on Bento Boxes! Recipes are easy to follow but also very elegant--and delicious. This book does exactly what the title says. If you are a fan of Japanese food and want to try it at home, this is a great choice. A note about this being a hardback book: it feels good to hold and looks great on the cookbook shelf!
This is a great book for fledgling cooks, lovers of Japanese cuisine, and anyone who is looking to branch out from their culinary comfort zone. I made the Udon with Eggs and Shrimp (instead of fish cake) for dinner tonight, and it was easy, filling, and fun to cook. I’m inspired!One of my biggest pet peeves with cookbooks that cover a particular culture’s cuisine, be it Greek, Turkish, Thai, or Indian, is that the writers of the cookbooks make the cuisine too “preciousâ€, for lack of a better word. There’s a huge emphasis placed on historical accuracy to the point of overkill, and lists of necessary cooking implements and ingredients go on for pages and pages. This book is different - it manages to be both accurate and straightforward. As other review writers have noted, there’s an awesome summary of how Japanese food has evolved over time, and the book helpfully separates ingredients and cooking implements that are necessary for recipes from those that are just helpful to have around. *I received a free copy of this book in exchange for an honest review.
Japanese Cooking Made Simple is a delightful cookbook.I love cookbooks. My favorite cookbooks are ones that give information about the culture and heritage of the food. This cookbook offers that and more. I was so pleased to get the lists of tools that are needed and why. And possible substitutions.Most of the recipes seem easy to follow, but it’s hard to find the ingredients in our small town. Also, I saw a couple of small typos, like asking you to cut 18-inch thick butternut squash slices when you’re making tempura.I love sushi and I’ve wanted to learn to make some simple rolls. The pictures in this book are detailed and easy to follow. I’m excited to finally have the resources to make Japanese food at home.
